Whatever, it was too dark to take a decent picture but this image is basically what you can expect out of your dinner. Basically.
So, yeah, these slow cooker bean pots are a thing of mine. And for good reason, since you can, pardon me so hard for using the expression, set it and forget it. We eat it for dinner once, over a scoop of rice, and then ladle the rest into freezable, single-portion containers for lunch the rest of the week. If that makes you feel too lazy, make a salad to go along with it. Or, you know, just slice up some hothouse tomatoes.
Because as The Mother always says, “As The Aunt always says, ‘As I always say, if I have tomatoes, I have salad.”
Her other catchphrases include: “My bean salad!! I’m just terrified I’ll forget my bean salad!!” and “I’m worried about your immortal soul!” (Translation: “I’m worried about all the fun you might be having with your vagina.“)
If you’d like to read more about my vagina, click here!
And now I’m done. I’ve gotten to say, completely naturally, “If you’d like to read more about my vagina…” What more could I have to accomplish? What more could I ask out of life?
Well, it turns out…kind of a lot. But what more could a BMG ask out of a blog post? Nothing, misfits. Not a fucking thing.
Make this slow cooker soup, misfits. Make it, and ponder your vaginas. They do so much for you! For everyone! FOR MANKIND! A vagina is the gift that keeps on giving. Which makes it a lot like a slow cooker. Which means AWW UH OH WE’VE COME FULL CIRCLE ON THIS POST AND I’VE CONNECTED MY VAGINA RANT TO TODAY’S RECIPE IN A WAY THAT IS
COHERENT SEMI-COHERENT NOT AT ALL COHERENT YET STILL NEGOTIABLE aw hell so it doesn’t work but THIS BLOG IS NOT A DEMOCRACY and in other news VAGINAS.
Me: “Sweetie, I compared vaginas to crockpots today!”
The Boy: “That’s wonderful, sweetheart, have a cookie!”
Smoky Slow Cooker Turkey and Bean Soup
1 smoked turkey drumstick
2 carrots, diced
1/2 head cabbage, shredded
1 lb. giant lima beans, soaked overnight, then rinsed thoroughly
1 onion, chopped
2 bay leaves
1/3 tsp. black pepper
1/2 tsp. Hungarian sweet paprika
1 tsp. sage
1 1/2 Tablespoons salt
1 6 ounce can tomato paste
Enough water to cover
Pile all ingredients into the slow cooker, including enough water to cover the other ingredients, and turn the heat onto high. Cook for about 8 hours. Then remove the drumstick, shred it, and return the meat to the pot. Cook on low an additional hour or two. Serve as is, or over a scoop of brown rice.
